The madness
Our Spirale of Cinsault is a slightly crazy project, born from the desire to push every detail as far as possible, in search of the ultimate expression of finesse, elegance and emotion.
In December 2019, a bottle of Cinsault Abuelo 2009 struck us deeply: ten years of age, beautiful notes of black cherry, a fine texture and a perfectly intact balance. This unique experience convinced us to plant a 30-are plot with 1,600 Cinsault vines from massal selection, supplied by nurseryman Lilian Berillon.
Wine style
The spiral shape gives each vine a different orientation towards the sun. We believe this diversity contributes to the wine’s complexity and singularity.
The Bettane & Desseauve Guide has already recognised it as a great wine: “A brilliant robe with luminous highlights. Very floral aromas, blending rose and jasmine, with beautiful intensity. A generous, enveloping and delicate palate, offering lovely length and an elegant texture. Persistent and perfumed finish.”

The little extras of winemaking
The round plot is planted in a spiral, just as nothing in Nature is square or rectangular. Each vine is trained in the goblet style, forming a small 360° shrub staked with a chestnut post. From the outside to the centre, no mechanisation is possible: everything is done by hand, from hoeing to plant treatments and, of course, the harvest, in small crates.
The wine is vinified in a round concrete tank, where natural convection movements amplify its complexity. A year of ageing in a stoneware jar then adds precision and finesse.
The detail that appeals
Each Spirale label is unique, hand screen-printed by our daughter Giulia, a graphic design student. All 657 bottles are numbered, and every label is applied one by one, by hand. We then carefully seal each cork with wax. A true artisan’s work, down to the smallest detail.
The perfect time
This great wine should be served at 16°C to preserve its finesse and complexity.
Enjoy on its own, as a meditation wine, or paired with veal sweetbreads.
