Wine style

The style of the wine gives it its name: Poivre de Mourvèdre. The delicate peppery notes that emerge on the nose and on tasting are fascinating.

This wine is matured entirely in used oak barrels to bring out the aromatic complexity without over-woody aromas.

The little extras of winemaking

At the end of the vinification process, when the wine is macerating in the vat, one of our delicate tasks is to decide on the date for devatting, i.e. the moment when the wine is poured out of the vat to separate it from all the solids – skins and pips – to start the ageing period.

This is a delicate decision: too long a maceration and the wine will harden and be too tannic; too short a maceration and the wine will lack structure, power and ageing potential. For our Mourvèdre vat, this decision is always the most obvious: after twenty to twenty-five days of maceration, the very peppery notes that characterise this wine suddenly appear on tasting. This is the infallible sign that maceration is complete and the vat can be poured.

Mourvèdre is the great Mediterranean grape variety. We often hear that it is difficult to grow, hard to vinify and takes a long time to taste. On our volcanic terroir, none of this is true. It is fine and spicy from its youth, and its tannic structure promises magnificent ageing potential.
